You can't record anything from Roku, no. You need to hook the Roku directly to a TV or AV Receiver. In fact Hulu and Netflix specifically have it in their Terms of Service, that you are not to record/capture/download their videos in any fashion.

It would be nice if the Roku could act like a TiVo Mini, but it would need to support MPEG-2 playback.

I'd say we've got better(though still not great) odds of making it act like a TiVo Stream client. The Stream uses HLS to send to the ipad/iphone, which is also what the Roku uses for live streams. The sticking point is the mutual authentication/encryption TiVo is using, so far I haven't seen any examples in the wild of anyone who has successfully reverse engineered it to work on pcs or other devices. This guy seems to be getting close though :)

That sure would be awesome, I'd love to placeshift my TiVo recordings on Roku.

I don't know. Maybe that's a hard limit, maybe it's just what gets sent to the iPad and the hardware is technically capable of more? Can't find a clear reference either way after a few minutes of Googling :). Even at 720p, I'd personally find value in it.
