The TV display won't show the bit setting, at least not to my knowledge.

Yes, I am set at 4K 10 bit. Haven't tried it with it set to plain 4K. Might try that next time I have an issue, but for now I am getting 2160 with it set on 10 bit.

I encountered this for the first time last night. I thought I was going to have to power cycle the box, but it suddenly returned to the home screen. First time that's happened on my 4, but I have all sorts of issues with YouTube on my 2XS. Haven't had anything happen on my stick (yet...)

Yes, HDR requires a 4K TV that has the necessary decoding ability for HDR. Some of the lowest cost or older UHD TVs may not support it. That sounds like a hardware failure. I suggest contacting Roku directly (not though this forum) and trying to get it replaced.

MKV is only a container, not a type of video. It can contain a wide variety of video and audio codecs. If your MKV contains MPEG2 video, then no Roku player (except a Roku TV) can play it. The video must be in a supported codec for both video and audio.  I suppose I could make my post a little more...

As noted, the Roku 4 has been out for some time. Wasn't aware it was unavailable in the UK.  However, I have to mention that every 4K TV I've seen is a Smart TV, and includes apps that are 4K capable. My Samsung has at a minimum 5 4K streaming sources, but again I can't speak to availability outside...

I don't encounter any lockups, but the Roku will blank the screen momentarily when changing resolution when using YouTube. And it doesn't have to be a 4K clip either.
